Caramel Apple Bars

Friends,

I come before you today exhausted, disillusioned, and overall grumpy.

Why you may ask? Oh, nothing major, just the first Presidential Debate last night.

Can I tell you how tired I am of all of this? I will not mention who I plan to vote for, or what I think of each of the candidates, but I will tell you that I am so freaking tired of this hot mess.

I am tired of the hatred, the fear mongering, the pandering: all of it. No matter where I go, it's on the TV, the radio, in classrooms; I can't get away from it

If you are like me, and so absolutely tired of this overwhelmingly negative ordeal, I have the perfect prescription to brighten your mood.


Turn off the TV, the radio, close the blinds if you have to...tune it all out

Instead, listen to the chopping of apples, smell the scents of cinnamon, nutmeg, and allspice fill your kitchen; envision a warm, gooey apple crumble bar, drizzled with caramel sauce.



Taste; embrace the coziness and drift off into bliss.

Feel better? I know I do.


I'm not advocating to just avoid the whole election; it's an important part of our lives and deserves some of your time. But don't let it get you down.

Don't let it break up friendships, or families. Don't let it separate us as a nation. We are stronger than party politics. Maybe we just all need to make some of these Apple Bars and share them with everyone around us. Apples are American after all.

Sorry, I don't mean to preach. I just really really love these Apple Bars and they helped me through some frustrating moments this week. If you are also in need of a pick me up, these are the way to go.

Remember to enjoy the simple things in life.

Caramel Apple Pie Bars Lazily Adapted from TwoPeasandTheirPod

 

for the filling:

2 1/2 cups peeled, diced Granny Smith Apples
1/2 tbsp fresh lemon juice
1/4 cup flour
1/2 tsp cornstarch
1/2 cup sugar
pinch of salt
1/2 tsp cinnamon
pinch of nutmeg
pinch of allspice


for the crust:

1 1/2 cups flour
1/2 cup sugar
1/2 tsp baking powder
pinch of salt
pinch of cinnamon
1/2 cup cold butter, cut into slices
1/2 egg, slightly beaten (2 tbsp of egg)
1/4 tsp vanilla

caramel sauce for drizzling

1. Preheat oven to 375 degrees and grease a square 8x8 pan with cooking spray or butter.

2. For the filling: Place diced apples in a large bowl and toss gently with lemon juice. In a medium bowl combine flour, cornstarch, sugar, salt, cinnamon, nutmeg and allspice. Pour over apples and toss gently, making sure apples are well coated in mixture. Set aside while you make the crust.

3. For the crust/crumb topping: combine flour, sugar, baking powder, salt and cinnamon in a large bowl. Cut the butter into the flour mixture using a pastry cutter, two knives, or your fingers, until the mixture is crumbly and no big lumps of butter remain.

4. Mix the egg and vanilla together and stir into flour mixture. The mixture will still be crumbly: that is ok. Press half of the dough into the bottom of the prepared pan.

5. Spread apple topping mixture evenly over dough. Drizzle with about 1/3 cup caramel sauce (I used storebought). Then top with remaining crumbly mixture, spreading evenly.

6. Bake at 375 for 30-45 minutes or until top becomes golden brown. Let cool in pan completely before cutting into bars, drizzling with more caramel sauce, and serve.

Happy October Everyone!

I still can't believe it's here. Finally I have an excuse to whip up insane amounts of recipes filled with apples, pumpkins, cider and the like.


And you know what else I learned? You can make your own Pumpkin Pie Spice and Apple Pie Spice.

Take that McCormick. :P

Blueberry Pie Bars

Hello friends!

Who knew that while gallavanting through Portland I would actually get a chance to bake up something myself?

Well, I did. My boyfriend, Josh, had come to me a few days before vacation to tell me that his grandmother (a master baker if I ever knew one) wanted to know if I'd like to bake something for the family while I was up there.

I, of course, said yes, not realizing just how much his family loves food. By the time it came down to it, I was convinced they were as in love food as I was (a scary thought), and baking for a whole group of foodies was now slightly intimidating. Especially after experiencing Standard Baking Company, Two Fat Cats Bakery, and of course, Josh's grandma's out-of-this-world carrot cake. Oh, and his grandpa's sticky buns. All from scratch.


But, I had my plan. I knew blueberries were a big deal up in Maine, so I had bookmarked this recipe from Kirbie's Cravings for Blueberry Pie Bars. They seemed simple enough but still able to pack a punch, and I really was (as always) in it to win it.


Oh, and I almost forgot to mention: do you see these eggs?

Now you know me; as a college student I can't afford to jump on the organic bandwagon. But when I didn't have enough eggs and mentioned this to Josh's grandmother, she said simply "oh we will see if Karen's chickens laid any today."

Yes, my friends, these eggs came from a chicken that morning. They do not joke around up here about fresh ingredients. Josh's aunt Karen owns a few, and now I had the honor of utilizing the freshest eggs I could ever possibly hope to obtain in my blueberry pie bars. I love this place.




So, into the oven it goes, and thank you Kirbie's Cravings, because the scent of this quickly filled the house and even reached the adjacent porch. Soon I had questions of "how long until it'd be done?" "Do we have ice cream to go with it?"


We served them up with a small scoop of vanilla, and I have to say I, with everyone else at the table, cleaned my plate when it came to these. A golden, crispy top with an almost custard-like texture in the center, bursting with fresh blueberry flavor - these are a crowd-pleaser if I ever knew one. They went almost too quickly in my opinion, and so I think it may be necessary to double the recipe next time I make it.

So ends my wonderful vacation in Maine. Parting was of course, such sweet sorrow, but I can only hope that I will return to the food-loving city again soon so that I may explore even more of it's deep culinary treasures.


Blueberry Pie Bars Slightly Adapted Via Kirbie's Cravings

for the crust/topping:
1 1/2 cups flour
3/4 cup sugar
1/8 tsp salt
3/4 cup cold butter

for the filling:
1 cup sugar
2 eggs
1/2 cup sour cream
3/8 cup flour
1/2 tsp vanilla extract
16 oz fresh blueberries

**Preheat oven to 350 and grease one 9x9 in pan with butter/cooking spray**

1. Make the crust/topping. Sift together flour, sugar, and salt in a medium bowl. Cut cold butter into the flour mixture. Use pastry cutter or two knives to begin mixing butter into flour mixture, then use clean hands to continue until mixture resembles coarse crumbs. Save 1 1/2 cups of the mixture for the topping and use the rest to press into a well-greased 9x9 square pan.

2. Make the filling. Whisk together sugar and eggs in medium bowl until well combined. Whisk in sour cream and vanilla extract. Fold in flour until just combined then gently fold in blueberries. Pour filling on top of crust and bake at 350 for 45-55 minutes, until it just begins to brown around the edges.
3. Serve up like a cobbler while still warm OR let cool completely to cut into bars.

Portland, Maine - A Foodie Town After My Own Heart

Hello friends!

I've been so terrible with posting, but I just woke up from the most pleasant food coma ever. How was I induced into such a coma you may ask? It all started with a pleasant vacation to...




Maine!


Portland, Maine, and the surrounding small islands to be more specific. This little city stole my heart this past Memorial Day weekend when I journeyed there with my boyfriend, Josh, and his family. First we spent a day relaxing on Great Diamond Island then it was a fun-filled grub (and pub) crawl through Portland, but not before we enjoyed some fresh, from-scratch sticky buns, prepared with love by Josh's grandparents.



I will have to split this into two posts because I just couldn't help myself when taking photos. So today we will focus on, what else, the two out-of-this-world bakeries of Standard Baking Company and Two Fat Cats Bakery. Now I had already read about Standard in an article on Twitter about "Top Bakeries in the US", so I knew I was in for a real treat. In both taste and character it does not disappoint. With some of the friendliest staff to the most mind-blowing baguettes, I was swooning as soon as I stepped through the door.




From classics like baguettes, focaccia, and croissants, to delectable sweets like vanilla bean madeleines and morning buns with pecans - I just couldn't decide what to buy. I could have just bought one of everything, but I had many more food shops and restaurants to explore, and with my college student budget, choices had to be made. I went with a demi baguette and the vanilla bean madeleine, and I can see how the baguette was voted into that article in the first place. Hard, crusty exterior with a light-as-air interior that melts in the mouth. I am sadly wishing I had one right now as a matter of fact.


Where to next? Well, until recently, the sister bakery of Standard was Two Fat Cats. I heard that it was recently sold to another owner, but it was (according to any and everyone I encountered in my days there) a must-go-to in Portland. So off we trekked to see what Two Fat Cats had to offer...





Do you see those pies? It took all of my self control not to buy one (again - so many places to see, so many foods to eat!) but their scent left me feeling warm and cozy and wanting to curl up with a thick slice and a dollop of ice cream. But I had to buy something that could be eaten (without shame) all by myself, so I settled, as if settling were truly the right word, on this red velvet cupcake.




Note: I am not a delicate eater. I apologize if the way I dove into this cupcake upsets you, but this is how we eat cupcakes on sugar mountain; and I dare you to go into Two Fat Cats Bakery one day and see if you can leave without inhaling something in seconds. Moist and with the perfect amount of cream-cheese frosting - this cupcake lasted even less time than it appears in the photos. Ah, little cupcake, you never stood a chance.


I barely stepped into Portland before I became overwhelmed with just how much they love food there. Dare I say it, could I have found my dream city to retire to, where I can eat and enjoy food to its fullest potential without surprising and/or shocking my peers? The dedication to good food continues on Wednesday, when I share with you gourmet groceries, crazy popcorn flavors, and...

mashed potato bacon pizza.

Pop Tart Pops

Hello all,

Can you believe I'm back at college already? Where on earth did my Spring Break go?! Sigh, well, back to real life I suppose. As real as college life is anyway.

Did I ever tell you what a smash hit the homemade pop tarts were? My boss was so happy with them that he heated his up in the microwave and actually ended up burning his mouth on it in excitement. So I wasn't surprised when another supervisor mentioned to me that our boss was really in the mood for pop tarts again. 'But I already did a post on pop tarts' I thought to myself.




'But this was important' she explained 'He won't accept the cinnamon challenge unless you give him more pop tarts.'

Cinnamon challenge you may ask? It's when you ingest an entire teaspoon of cinnamon by itself and try to swallow. Yes, I know, college students have weird ideas concerning entertainment. This is one of them.

But how could I say no to seeing that happen? So I thought to myself 'how do I switch up pop tarts to make it delicious for my coworkers and still new and exciting for my readers?'

Answer: Pop Tart POPS!



Like cake pops, only more pie-ish. I decided to stick with the classic strawberry which is always a favorite, along with a few Nutella-filled Pops for those daring eaters.

I used the basic pop tart pie crust from my previous post here with the only switch of using Nutella as a filling for some along with a chocolate frosting. Can I tell you though, between us, buy the premade pie crust. Seriously, just do it. Homemade is neat and all, but it gets finicky really quickly. and the pre-made is already rolled out to the right thickness and will save you a good deal of time.
 


Needless to say they are sure to be a huge hit at my job (where I believe I may slowly be giving everyone diabetes with all these treats). If you enjoy your co-workers' company as much as I do, maybe whip a few up for them, or if not, for some hungry housemates!

Oh, and as for the cinnamon challenge? I will try my best to get a video of every exciting second of it for you all to see. I know I can't wait. :)

Pop Tart Pops

1 homemade or store bought pie crust (recipe link here)
1 jar strawberry preserves or 1 jar Nutella
Popsicle sticks
Chocolate or Vanilla Glaze

1. Roll out Pie Crust to 1/4 inch thickness and cut into equally sized small rectangles. Place rectangles on parchment-lined cookie sheet and place one Popsicle stick in the center of each.

2. Scoop one teaspoon of filling over Popsicle stick and center of pie crust rectangle. Cover with another pie crust rectangle and use a fork to crimp the edges all the way around.

3. Bake at 350 for 7-8 minutes or until golden.

4. Coat with frosting and sprinkles and enjoy!

Key Lime Pie Cupcakes

Hello all!

This will be another quick post as I am still running the gauntlet that is Rutgers Midterms. Sigh, why can't I just get graded for how delicious these cupcakes are?
  


Key Lime Pie Cupcakes: what a thought. Now I am always a bit disappointed with citrus-y cupcakes, because the tartness from the fruit just isn't there. So I was pleasantly surprised when these cupcakes: moist, dense, and sweet, were also so full of lime flavor that I almost puckered a little when I ate one. Almost.

Sweet Escapes - Desserts in Jars

Hello all!

So for this week's Sweet Escape, I thought I'd introduce you (in case you don't just spend hours of your valuable time of Pinterest like I do) to the new realm of DIY Gifts - Desserts in a Jar.

I plan on doing this for pretty much any and all birthdays, Christmas etc. Honestly, who do you know who wouldn't want a mason jar filled with either a) cake b) pie or c) cheesecake ? All done up in a nice little bow, and the mason jar is an adorable keepsake after the treat inside is eaten. Here's just a few that I have on my list, ready and waiting for the lucky birthday guy/gal to enjoy.

1. Smores Cake by How Sweet It Is


Sometimes I think I should just tell you all, at the onset of every post, to check out this blog. Really. Every time I do a "Sweet Escape" Post with actual food, she's got a recipe for it. This is a great gift for the summer, when s'mores is on everyone's list, but I'd be perfectly content getting one of these in any other season too. I personally love how much marshmallow there is and the contrast in color you can see in the jar when you move from graham cracker, to chocolate, to marshmallow. 



Now this is the kind of pie I would want to bring to Thanksgiving! Imagine sitting around the table, after engorging on turkey and stuffing, to be offered this beautiful, delicate pie in a jar as dessert. No messy cutting and everyone gets the same size. I love the cutouts and the lattice top. I also love how the recipe gives you the option to make these, then freeze them unbaked! If you have a hankering for pie, just take it out of the freezer, stick it on a pan and into the oven it goes...and then..poof! The perfect single serving of pie. 



I told you there'd be cheesecake. Cheesecake Factory eat your heart out. Now I can customize my cheesecake and keep it all to myself in this adorable little Mason Jar. I just adore how all of these recipes allow customization by the baker, and they look like so much fun! Not to mention, they make quite the impressive photo shoot (as you can see here by all of these lovely blogs' photos). If you really want to impress your friends, have them over for dessert one night and whip these babies out. They'll never want to leave.



This was the first post I saw with the infamous Mason Jar. Glorious Treats switches it up a bit by baking the cake separately as cupcakes, and then slicing and layering it with frosting inside the jar. This allows for more decoration to be had, and more fun with the piping. Oh how I wish my piping could look like that! But I guess I can practice by making these cute little gifts with extra cupcakes!



And now, I can even have my ice cream in a jar. I always want to experiment with making my own ice cream, but without an ice-cream maker I'm usually at a loss. Now here's a recipe that does not require one, just mix it up, freeze it, and voila! Ice cream in a jar. Who knew? The jars look so neat with the frost on the outside as well, and these would be great to make in the summer with any little ones you might have lying about, bored because they're not learning anything awesome (I know I'm the only one who sees it that way but to each his own right?).
